Abstract

This research paper focuses on the Millet Cafe business model implemented under the Odisha Millets Mission, a government initiative aimed at promoting millet consumption and sustainable farming practices in the state of Odisha, India. The Millet Cafe concept involves establishing cafes that serve millet-based dishes and beverages, creating a market for millet products while raising awareness about their nutritional and environmental benefits. The study explores the key components of the Millet Cafe business model, including sourcing of millets from local farmers, menu planning, culinary innovation, marketing strategies, and customer engagement. It assesses the economic viability and social impact of the model, examining factors such as profitability, employment generation, farmers' income enhancement, and consumer acceptance of millet-based food products.

Two enterprises, Trishakti SHG federation, Barmuda, Bhubaneswar in collaboration with Directorate of Mission Shakti, Government of Odisha and Chhapanbhog café, Jaydev Bihar, Bhubaneswar were covered in this study. Through a combination of qualitative and quantitative research methods, including interviews, surveys, and financial analysis, this research paper evaluates the performance and effectiveness of the Millet Cafe business model. It examines the challenges faced by entrepreneurs in implementing the model, including supply chain management, consumer perceptions, and regulatory considerations. The findings of this research contribute to a deeper understanding of the Millet Cafe business model as a strategy to promote millet consumption and sustainable farming practices. It offers insights into the factors that contribute to the success or failure of such initiatives, providing recommendations for policymakers, entrepreneurs, and stakeholders interested in replicating or scaling similar models. Ultimately, this research paper highlights the potential of the Millet Cafe business model in driving socio-economic and environmental transformation by fostering local food systems, supporting smallholder farmers, and promoting healthier and more sustainable dietary choices.
